Slow Cooker Pho

Sometimes, when it comes to cooking, simplicity is the best - and because it's low on prep yet super high in flavor, this easy pho recipe is as simple as simple gets!

Ingredients

  • 2 pc onions, thin sliced
  • 5 pc star anise
  • 5 pc cloves
  • 3 pc cinnamon sticks
  • 2 qt beef stock
  • 1.5 lbs beef short rib, 1 inch cubes
  • 0.5 lbs mung beans
  • 0.5 cup cilantro, rough chopped
  • 0.5 cup thai basil, rough chopped
  • 0.5 cup scallion, thin sliced
  • 2 tblsp ginger, minced
  • 2 tblsp garlic, minced
  • 1 pc medium carrot, 1 inch dice
  • 8 oz vermicelli rice noodles
  • 1 tblsp sriracha
  • 3 tblsp hoisin BBQ
  • 1 tblsp salt

Directions

  1. Combine all ingredients into slow cooker except the rice noodles, scallions, basil, cilantro, mung beans
  2. Slow cook on low for 8 hours
  3. For the final 15 min of cooking add vermicelli noodles and half amounts of scallions, basil, cilantro, and mung beans
  4. Stir in ingredients and portion into 16 oz bowls
  5. Garnish with remaining herbs and beans
