Super Bowl Weekend

WINGS ON DECK!

This weekend is one of my favorite times of the year… SUPER BOWL BABY!!! Well technically not this year, anyone who knows me knows I bleed blue - GIANTS ALL DAY.

It’s like my own mini nightmare game, but then I think about 2007, 2011, Tyree, & Eli and realized we’re still the greatest.  Every year since college, I make some EPIC wings for the game, and what better time to pass them on!?


Sriracha Butter Wings
I created these (selfishly because sriracha is arguably my favorite thing on the planet) but also for my restaurants during occasions exactly like this! A little spicy, a ton of flavor, and a great all around wing choice.

Ingredients:
- 2 dozen drum and wing pieces, separated
- 1/2 lbs sweet butter
- 1.5 cups sriracha
- 1 tblsp pureed garlic
- 1 tblsp salt
- 1 qt veg oil

Process:
1. In a large saute pan with high rims, bring oil to 350F
2. Once oil is at 350F, place chicken in oil and be careful of the popping and splashing initially
3. every 5/7 min move chicken around and turn to cook evenly
4. After about 30 min, the chicken wings will be ready, remove from oil and rest on plate lined with paper towel
5. In a medium sauce/stock pot, combine butter, sriracha, garlic and salt
6. Bring combined ingredients to a light boil and stir to emulsify butter and other ingredients into sriracha
7. Light boil for 8 min and then leave on simmer until ready to serve
8. In a large mixing bowl, toss sauce with fried chicken until chicken is fully coated
9. Serve and garnish with thinly sliced chives


Dirty Wings
I created these in college when I was holding down the kitchen of the bar my best friend and I ran together. They were so popular, I brought them to New York and put them on the menu’s of some of the first restaurants I worked with. They’re an incredible mix of all the best things about wings & one of my all time favorites!

Ingredients:
- 2 dozen drum and wing pieces separated
- 1.5 cup bleu cheese dressing (not chunky)
- .5 cup orange juice
- 1 tblsp pureed garlic
- 1 cup store BBQ sauce
- .5 cup franks red hot
- 1 qt veg oil
- .5 cup crumbled bleu cheese

Process:
1. In a large saute pan with high rims, bring veg oil to 350F
2. Once oil is at 350F, place chicken in oil and be careful of the popping and splashing initially
3. every 5/7 min move chicken around and turn to cook evenly
4. After about 30 min, the chicken wings will be ready, remove from oil and rest on plate lined with paper towel
5. In a medium sauce/stock pot, combine bleu cheese, franks, OJ, garlic, and BBQ sauce
6. Bring combined ingredients to a light boil and stir to emulsify
7. Light boil for 8 min and then leave on simmer until ready to serve
8. In a large mixing bowl, toss sauce with fried chicken until chicken is fully coated
9. Serve and garnish with bleu cheese crumbles


Oven-Baked Hot Wings:
My twist on hot wings: easy to make at home, healthier (I know, I know, they’re still wings) than deep-frying, and PACKED with flavor.

Ingredients:
-  2 dozen drum and wing pieces separated
- .5 cup paprika
- .5 cup garlic powder
- .5 cup onion powder
- .25 cup salt
- .25 cup pepper
- .5 cup veg oil
- 1 lemon - juiced, no seeds

Process:
1. Pre-heat oven to 375F
2. In a large mixing bowl, marinate wings with salt, oil, and lemon
3. Mix and stir so that all ingredients are soaking into chicken. Let marinate for 5 minutes.
4. In a separate bowl, combine all dry ingredients and mix thoroughly.
5. Add dry mixture to the wings. Massage and mix into chicken wings until evenly and thoroughly coated.
6. Place on aluminum foil lined baking sheet and cook
7. After about 45 min, the chicken wings will be ready, remove from tray and rest on plate lined with paper towel
8. Serve with any of your favorite sauces and enjoy
